Description

Making a 5-Star Pot Roast in a slow cooker is the perfect way to enjoy a hearty, comforting meal with minimal effort. With tender chuck roast, rich broth, and flavorful vegetables, this classic dish is a dinner favorite. Great for weeknights or weekend gatherings!


Ingredients

  • 34 lb chuck roast
  • 1 tbsp olive oil
  • 1 onion, sliced
  • 4 carrots, cut into chunks
  • 4 gold potatoes, quartered
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tsp dried thyme
  • 1 bay leaf

Instructions

  1. Season the chuck roast with salt and pepper on all sides.
  2. Heat olive oil in a skillet and sear the roast for 2–3 minutes per side until browned.
  3. Place the sliced onions, carrots, and potatoes into the bottom of the slow cooker.
  4. Add garlic, thyme, bay leaf, and Worcestershire sauce on top of the vegetables.
  5. Place the seared roast on top of the vegetables.
  6. Pour the beef broth around the roast.
  7. Cover and cook on LOW for 8 hours or HIGH for 4–5 hours.
  8. Remove bay leaf before serving. Let roast rest 10 minutes, then slice and serve with veggies and broth.

Notes

Add 1 cup of red wine to the broth for a richer flavor. You can also thicken the broth with a cornstarch slurry if you prefer a gravy-style sauce.
