  • 1 lb ground lamb or beef

  • 1/2 cup crumbled feta cheese

  • 1/4 cup chopped sun-dried tomatoes

  • 1/4 cup chopped kalamata olives

  • 1 tbsp fresh oregano, chopped

  • 1/2 cup crushed pita chips or almond flour (for low-carb version)

  • 1 small onion, finely diced

  • 2 cloves garlic, minced

  • 1 egg

  • 1 tbsp olive oil (for sautéing)

  • Salt and pepper to taste

  • Optional: 1 tbsp lemon juice for finishing


Instructions

  • Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.

  • In a small pan, heat olive oil over medium heat. Sauté onions and garlic until soft and fragrant. Let cool slightly.

  • In a large bowl, combine the ground meat, sautéed onions and garlic, feta, sun-dried tomatoes, olives, oregano, and crushed pita or almond flour.

  • Add the egg, salt, and pepper. Mix gently until just combined—do not overmix.

  • Shape into a loaf and place on the prepared baking sheet or press into a loaf pan.

  • Bake for 40–45 minutes, or until the internal temperature reaches 160°F (71°C).

 

  • Let rest for 5–10 minutes. Drizzle with lemon juice before serving for a bright, fresh finish.

  • Swap lamb for ground turkey or chicken for a lighter version.

  • Serve with roasted vegetables or a side of couscous for a full Mediterranean meal.
