This Mediterranean-Inspired Meatloaf is a fresh and flavorful twist on the traditional recipe. Packed with bold Greek ingredients like feta cheese, sun-dried tomatoes, kalamata olives, and fresh oregano, it’s juicy, herbaceous, and anything but boring. Ingredients
1 lb ground lamb or beef
1/2 cup crumbled feta cheese
1/4 cup chopped sun-dried tomatoes
1/4 cup chopped kalamata olives
1 tbsp fresh oregano, chopped
1/2 cup crushed pita chips or almond flour (for low-carb version)
1 small onion, finely diced
2 cloves garlic, minced
1 egg
1 tbsp olive oil (for sautéing)
Salt and pepper to taste
Optional: 1 tbsp lemon juice for finishing
Instructions
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper or lightly grease a loaf pan.
In a small pan, heat olive oil over medium heat. Sauté onions and garlic until soft and fragrant. Let cool slightly.
In a large bowl, combine the ground meat, sautéed onions and garlic, feta, sun-dried tomatoes, olives, oregano, and crushed pita or almond flour.
Add the egg, salt, and pepper. Mix gently until just combined—do not overmix.
Shape into a loaf and place on the prepared baking sheet or press into a loaf pan.
Bake for 40–45 minutes, or until the internal temperature reaches 160°F (71°C).
Let rest for 5–10 minutes. Drizzle with lemon juice before serving for a bright, fresh finish.
Notes
Swap lamb for ground turkey or chicken for a lighter version.
Serve with roasted vegetables or a side of couscous for a full Mediterranean meal.
