Description

The Almond Wreath Cake is a delightful treat combining rich almond flavors with a soft, tender cake texture, perfect for celebrations and festive occasions.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup almond flour
  • 1 cup sugar
  • 1 cup butter, softened
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup heavy whipping cream
  • 1 cup powdered sugar
  • 1/2 cup chopped almonds
  • 1/2 cup cranberries

Instructions

  1. Preheat the oven to 350°F (175°C). Grease and flour a bundt cake pan.
  2. Cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, beating well after each addition. Mix in vanilla and almond extracts.
  4. In a separate bowl, whisk together the all-purpose flour, almond flour, baking powder, and salt. Gradually add to the creamed mixture.
  5. Pour the batter into the prepared pan and smooth the top.
  6. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean.
  7. Let the cake cool in the pan for 10 minutes, then invert it onto a wire rack to cool completely.
  8. For the frosting, beat the heavy cream until stiff peaks form, then slowly add in the powdered sugar.
  9. Spread the whipped cream over the cooled cake, then top with chopped almonds and cranberries for decoration.
  10. Serve and enjoy!

Notes

Make sure your butter is softened for easy creaming. You can also substitute the cranberries with other fruits for a different flavor.
