 - 1 cup cherry tomatoes, halved
 - 1 cup cucumber, diced
 - 1/2 cup red bell pepper, chopped
 - 1/4 cup red onion, finely chopped
 - 1/2 cup olives (black or green), sliced
 - 1/2 cup Italian dressing
 - Salt and pepper, to taste
 - 1/4 cup fresh basil, chopped
 
Instructions
- Cook the tortellini according to package instructions until al dente. Drain and allow to cool.
 - In a large bowl, combine cooked tortellini, cherry tomatoes, cucumber, bell pepper, red onion, and olives.
 - Pour Italian dressing over the mixture and toss to combine.
 - Season with salt and pepper to taste.
 - Garnish with chopped fresh basil and refrigerate for at least 30 minutes before serving.
 
Notes
To make this salad more filling, add grilled chicken, salami, or shrimp. You can also stir in a spoonful of mayo or sour cream for a creamy twist.
