- 2 large sweet potatoes (about 2 cups mashed)
- 1 cup granulated sugar
- 1/2 cup brown sugar
- 1/2 cup evaporated milk
- 1/2 cup unsalted butter (melted)
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 teaspoon ground nutmeg
- 1/4 teaspoon salt
- 1 unbaked 9-inch pie crust
Instructions
- Preheat your oven to 350°F (175°C) and ensure the oven rack is in the center.
- Peel and roast the sweet potatoes until soft. Then mash them in a bowl.
- Mix the mashed sweet potatoes with granulated sugar, brown sugar, melted butter, eggs, evaporated milk, vanilla extract, cinnamon, nutmeg, and salt. Stir until everything is smooth and well combined.
- Roll out the pie crust and place it into a 9-inch pie dish. Crimp the edges to make it look nice.
- Pour the sweet potato filling into the crust and smooth the top.
- Bake the pie for 55–60 minutes, or until set. A toothpick inserted in the center should come out clean.
- Let the pie cool on a wire rack for about 2 hours.
- Slice and serve with whipped cream or ice cream if desired.
Notes
Try adding a splash of bourbon for depth or topping with marshmallows near the end of baking for a gooey finish.
