  • 1 1/2 cups fresh or frozen blackberries (225g)
  • 1/4 cup granulated sugar (50g)
  • 2 tablespoons cornstarch + 2 tablespoons water
  • 1 tablespoon lemon juice
  • 1 1/2 cups heavy whipping cream (360ml)
  • 1/4 cup powdered sugar (30g)
  • 1 teaspoon vanilla extract
  • Fresh blackberries, edible flowers, dark chocolate shavings, cocoa powder (for decoration)

Instructions

  1. Bake the Cakes: Preheat oven to 350°F (175°C). Grease and line two 8 or 9-inch cake pans. In a large bowl, mix flour, sugar, cocoa powder, baking powder, baking soda, and salt. In another bowl, whisk eggs, oil, buttermilk, and vanilla. Combine wet and dry mixtures, then stir in hot water. Divide into pans and bake for 30–35 minutes. Let cool.
  2. Make the Filling: In a saucepan over medium heat, cook blackberries and sugar until juicy. Add cornstarch slurry and lemon juice. Stir until thickened. Let cool.
  3. Whip the Cream: Beat heavy cream, powdered sugar, and vanilla until stiff peaks form.
  4. Assemble: Place one cake layer on a plate. Spread blackberry filling on top. Add second cake layer, then cover with whipped cream.
  5. Decorate: Garnish with fresh blackberries, chocolate shavings, cocoa powder, and edible flowers. Chill at least 1 hour before serving.

Notes

Use room temperature ingredients for a smoother batter. Edible flowers and chocolate shavings add visual drama. For added richness, spread chocolate ganache over each cake layer before assembling.
