- 2 cups hashbrowns
- 1 pound sausage
- 6 eggs
- 1 cup shredded cheese
- 1 cup milk
- Salt and pepper to taste
- Optional: chopped bell peppers, onions, or other vegetables
Instructions
- Preheat the oven to 350°F (175°C).
- In a skillet, cook the sausage over medium heat until browned.
- In a large bowl, whisk together the eggs, milk, salt, and pepper.
- Layer the hashbrowns in a greased baking dish.
- Add the cooked sausage and any optional vegetables on top of the hashbrowns.
- Pour the egg mixture over the layers and top with shredded cheese.
- Bake for 30-35 minutes or until the eggs are set and the top is golden brown.
- Let cool for a few minutes before serving.
Notes
For a vegetarian version, omit the sausage and add more vegetables. You can prepare everything the night before for a quick breakfast in the morning.
