Instructions
- Preheat your oven to 350°F (175°C).
- In a large bowl, mix the cottage cheese, eggs, garlic powder, salt, and black pepper.
- Stir in the chopped spinach, diced tomatoes, and bell peppers.
- Pour the mixture into a greased baking dish.
- Sprinkle the shredded cheese on top.
- Bake for 30-35 minutes or until the eggs are set and the cheese is golden.
- Let it cool for a few minutes before serving.
Notes
Use your favorite vegetables like mushrooms or zucchini. Add herbs such as parsley or basil for extra flavor. Don’t overcook—the eggs should remain fluffy. Add sausage or bacon for a heartier version.
