- 1 cup unsalted butter
- 2 cups granulated sugar
- 4 large eggs
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 cup cocoa powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking powder
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×5-inch loaf pan.
- In a large bowl, melt the butter and mix in the sugar until smooth.
- Add eggs one at a time, mixing well after each, then stir in vanilla.
- In a separate bowl, whisk together flour, cocoa powder, salt, and baking powder.
- Gradually fold dry ingredients into the wet ingredients until just combined.
- Fold in chocolate chips, if using.
- Pour batter into prepared loaf pan and smooth the top.
- Bake for 45–55 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in pan for a few minutes, then transfer to wire rack to cool completely before slicing.
Notes
Do not overmix the batter to keep the texture soft and moist. For extra richness, use dark cocoa powder or mix in different types of chocolate chips. Brownie Bread is also delicious with a dusting of powdered sugar or a scoop of vanilla ice cream.
