Cheddar and Herb Soda Bread

Description

A simple and delicious loaf of bread made without yeast, featuring sharp cheddar cheese and fresh herbs.


Ingredients

  • 4 cups all-purpose flour (plus extra as needed)
  • 1 ½ tsp baking soda
  • 1 tsp salt
  • 2 tbsp chopped fresh chives
  • 1 tbsp chopped fresh thyme
  • 1 tbsp chopped fresh rosemary
  • 1 tbsp chopped fresh sage
  • 1 cup shredded cheddar cheese
  • 1 ¾ cups buttermilk

Instructions

  1. Preheat the oven to 425°F.
  2. In a mixing bowl, combine the flour, baking soda, and salt. Stir together until mixed well.
  3. Add the chopped fresh herbs and shredded cheese to the bowl. Mix to combine.
  4. Pour in the buttermilk and stir until everything is combined into a dough.
  5. Turn the dough out onto a lightly floured counter. Bring the dough together and knead lightly just a couple of times to form a smooth ball.
  6. Shape the dough into a ball and flatten it into a 7-inch circle.
  7. Lightly flour a baking sheet and transfer the dough onto it. Dust the top with a little more flour.
  8. Use a sharp knife to score a cross into the top of the dough, cutting about 1/2 inch deep.
  9. Bake the bread for 15 minutes, then reduce the heat to 375°F. Continue baking for another 30 to 35 minutes until fully baked.
  10. After baking, wrap the soda bread in a tea towel to cool. Enjoy!

Notes

Serve warm with butter or alongside soup or salad. Store in an airtight container for up to 2 days.
