Cherry Amaretto Tiramisu

Description

A delightful twist on the classic Italian dessert, combining creamy mascarpone with fresh cherries and Amaretto liqueur for a sweet and tart flavor.


Ingredients

  • 2 cups fresh cherries, pitted and halved
  • 3 tbsp granulated sugar
  • ¼ cup Amaretto liqueur
  • 1 tbsp lemon juice
  • 1 cup heavy cream, cold
  • 1 cup mascarpone cheese, room temperature
  • ⅓ cup powdered sugar
  • 1 tsp vanilla extract
  • ¾ cup brewed espresso or strong coffee, cooled
  • 2 tbsp Amaretto liqueur
  • 1 pack (approx. 24) ladyfinger biscuits (gluten-free if preferred)
  • Unsweetened cocoa powder (for dusting)
  • Fresh cherries and shaved dark chocolate (optional)

Instructions

  1. In a saucepan, combine the cherries, granulated sugar, lemon juice, and ¼ cup Amaretto. Cook over medium heat for 5–7 minutes, stirring occasionally, until the cherries are soft and slightly syrupy. Remove from heat and let cool completely.
  2. In a large bowl, beat the cold heavy cream until it forms soft peaks. In another bowl, whisk the mascarpone cheese, powdered sugar, and vanilla extract until smooth.
  3. Gently fold the whipped cream into the mascarpone mixture until fully combined and fluffy.
  4. Stir 2 tablespoons of Amaretto into the cooled espresso. Pour the mixture into a shallow dish for dipping.
  5. Dip each ladyfinger briefly into the espresso-Amaretto mixture for just 1–2 seconds on each side.
  6. Arrange a single layer of dipped ladyfingers in the bottom of an 8″x8″ dish or in trifle glasses.
  7. Spoon half of the mascarpone cream over the layer of ladyfingers.
  8. Add half of the cherry mixture evenly over the cream.
  9. Repeat the layers with the remaining ladyfingers, mascarpone cream, and cherries.
  10. Cover the dish and refrigerate for at least 240 minutes, or preferably overnight, to let the flavors meld and the dessert firm up.
  11. Before serving, dust with cocoa powder and top with shaved chocolate and a few extra cherries for a beautiful finish.

Notes

Use fresh cherries for the best flavor; if out of season, frozen cherries can be substituted. Allow the tiramisu to chill overnight for the best taste.
