Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, cream together the molasses, brown sugar, and softened butter until smooth.
- Beat in the egg until well combined.
- In a separate bowl, whisk together the flour, baking soda, spices, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Roll the dough into balls and then roll them in granulated sugar.
- Place the cookies on a baking sheet lined with parchment paper, spacing them about 2 inches apart.
- Bake for 8-10 minutes until the edges are set.
- Allow to cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
Notes
Store in an airtight container at room temperature for up to a week. Can be frozen for longer storage. For best texture, use softened butter and avoid overbaking.
