- 4 chicken thighs or breasts
- 2 tablespoons olive oil
- 1 onion, sliced
- 2 apples, peeled and sliced
- 1 cup apple cider
- 1 teaspoon thyme
- Salt and pepper to taste

Instructions
- In a large skillet, heat olive oil over medium heat.
- Season the chicken with salt and pepper, then add to the skillet. Cook until browned on both sides, about 6-7 minutes.
- Remove the chicken and set aside.
- In the same skillet, add sliced onions and apples; sauté until softened.
- Pour in the apple cider and add thyme. Bring to a simmer.
- Return the chicken to the skillet, cover, and reduce heat. Cook for 20-25 minutes until the chicken is cooked through.
- Serve the chicken with the cider sauce over rice or crusty bread, garnishing with parsley if desired.
Notes
Marinate the chicken in apple cider for extra flavor. Use tart apples like Granny Smith for the best balance of sweetness.
