- 4 chicken thighs
- 2 apples, sliced
- 1 onion, chopped
- 1 cup apple cider
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh thyme for garnish
Instructions
- In a large skillet, melt butter over medium heat.
- Season the chicken with salt and pepper, then brown each side for about 5 minutes. Remove and set aside.
- In the same skillet, add chopped onion and sliced apples. Cook until softened.
- Pour apple cider into the pan, stirring to scrape up any browned bits.
- Return chicken to the skillet. Cover and simmer for 20–25 minutes until the chicken is fully cooked.
- Garnish with fresh thyme and serve with rice or crusty bread.
Notes
For extra richness, add a splash of cream in the final few minutes of cooking. This dish is also excellent served with mashed potatoes or over buttered noodles.
