Description

Chicken Normandy is a French-inspired dish that combines savory chicken with the sweet, rich flavor of apples and apple cider. Ingredients

  • 4 chicken thighs
  • 2 apples, sliced
  • 1 onion, chopped
  • 1 cup apple cider
  • 2 tablespoons butter
  • Salt and pepper to taste
  • Fresh thyme for garnish

Instructions

  1. In a large skillet, melt butter over medium heat.
  2. Season the chicken with salt and pepper, then brown each side for about 5 minutes. Remove and set aside.
  3. In the same skillet, add chopped onion and sliced apples. Cook until softened.
  4. Pour apple cider into the pan, stirring to scrape up any browned bits.
  5. Return chicken to the skillet. Cover and simmer for 20–25 minutes until the chicken is fully cooked.
  6. Garnish with fresh thyme and serve with rice or crusty bread.

Notes

For extra richness, add a splash of cream in the final few minutes of cooking. This dish is also excellent served with mashed potatoes or over buttered noodles.
