Description

Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 2 large eggs
  • 1 cup molasses
  • 1/2 cup hot water
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour a 9×13 inch baking pan.
  2. In a bowl, mix the flour, baking soda, baking powder, ginger, cinnamon, nutmeg, and salt. Set aside.
  3. In a large bowl, beat the butter and brown sugar until smooth.
  4. Add the eggs one at a time, mixing well after each.
  5. Stir in the molasses and vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture while alternating with hot water. Start and end with dry ingredients. Mix until combined.
  7. Pour the batter into your prepared pan.
  8. Bake for 30-35 minutes or until a toothpick comes out clean.
  9. Let it cool for a few minutes, then slice and serve.

Notes

Serve warm or at room temperature, topped with whipped cream or a scoop of vanilla ice cream. Store leftovers in an airtight container at room temperature for up to 3 days or refrigerate for up to a week. Freeze for up to 3 months if needed.
