- 2 cups Ricotta Cheese (use whole milk for a richer texture)
- 1 cup Powdered Sugar (substitute with coconut sugar for a healthier option)
- 1 teaspoon Vanilla Extract (opt for pure vanilla for the best taste)
- 1/2 teaspoon Cinnamon (omit if you prefer a classic cannoli flavor)
- 1/2 cup Mini Chocolate Chips (dark chocolate enhances richness)
- 2 pre-made pie crusts (homemade crust works beautifully, too)
- 1 large Egg (for an egg wash that gives a glossy finish)
- Sugar (for sprinkling)
- 1/4 cup Chopped Pistachios
- 3 pieces Maraschino Cherries
- 1/4 cup Extra Chocolate Chips
Instructions
- Preheat your oven to 375°F (190°C).
- In a mixing bowl, combine the ricotta cheese, powdered sugar, vanilla extract, cinnamon, and mini chocolate chips. Mix until smooth and creamy.
- Take one pie crust and fit it into the bottom of a greased baking dish. Spread the ricotta mixture over the crust evenly.
- Place the second pie crust on top of the filling, pressing down gently.
- Beat the egg and brush it over the top crust for a shiny finish. Sprinkle some sugar on top for added sweetness.
- Bake in the preheated oven for 25–30 minutes, or until the crust is golden brown.
- Once baked, let it cool before cutting into squares. Decorate with chopped pistachios and maraschino cherries on top. For extra chocolate lovers, sprinkle some more chocolate chips!
Notes
Store leftovers in the refrigerator for 3–4 days or freeze for up to a month. Wrap tightly before freezing to maintain texture and flavor.
