- 8 oz Cream Cheese
- 1 cup Powdered Sugar
- 1/4 cup Fresh Lemon Juice
- 1 tbsp Lemon Zest
- 8 oz White Chocolate
- 1 tsp Vanilla Extract
- 1/2 cup Chopped Nuts or Coconut Flakes (Optional)
Instructions
- In a bowl, soften the cream cheese. Mix in powdered sugar, fresh lemon juice, lemon zest, and vanilla extract until smooth.
- Melt white chocolate in a microwave-safe bowl or over a double boiler. Let cool slightly before adding to the lemon mixture and stir well.
- Chill the mixture in the refrigerator for about 30 minutes until firm enough to handle.
- Scoop small portions and roll them into balls. Optionally, roll in chopped nuts or coconut flakes.
- Place truffles on a parchment-lined tray and set in the fridge for another hour.
Notes
Serve chilled for the best flavor. Store in an airtight container in the refrigerator for up to a week, or freeze separated with parchment paper for longer storage.
