Ingredients
- Salmon fillets

- Cornstarch

- Panko breadcrumbs

Instructions
- Preheat the oven to 400°F (200°C).
- Cut salmon fillets into bite-sized pieces.
- In one bowl, mix flour, cornstarch, salt, and pepper. In another bowl, beat the eggs. In a third bowl, place panko breadcrumbs.
- Dip each salmon piece into the flour mixture, then the eggs, and finally coat with panko breadcrumbs.
- Place the coated salmon bites on a baking sheet lined with parchment paper.
- Bake for about 15-20 minutes or until crispy and golden.
- In a small bowl, mix sweet chili sauce and sriracha for the dipping sauce.
- Serve the salmon bites hot, garnished with sliced green onions.
Notes
Make sure to cut the salmon into even sizes for even cooking. For extra crunch, consider double-coating the salmon.
