Ingredients

  • 1 cup dill pickle juice
  • 1 cup breadcrumbs (preferably seasoned)
  • ½ cup grated Parmesan cheese
  • 2 large eggs
  • ½ cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Cooking oil (for frying)

Instructions

  1. In a large bowl, combine the chicken breasts and dill pickle juice. Marinate in the refrigerator for at least 30 minutes.
  2. Set up a three-bowl breading station: one with seasoned flour, one with whisked eggs, and one with breadcrumbs mixed with Parmesan cheese.
  3. Heat oil in a skillet over medium heat until hot.
  4. Remove chicken from marinade, shaking off excess. Dredge in flour, dip in egg, then coat in breadcrumb mixture.
  5. Carefully fry breaded chicken for 5-7 minutes per side until golden brown and cooked through.
  6. Transfer to paper towels to absorb excess oil and let rest for 5-10 minutes.
  7. Serve hot and enjoy!
