Description

Delicious and easy roasted carrots that are crispy on the outside and tender on the inside, perfect for any meal.


Ingredients

  • 1 pound Carrots
  • 2 tablespoons Olive oil
  • 2 tablespoons Butter
  • 3 cloves Garlic, minced
  • 1 teaspoon Salt
  • 1/2 teaspoon Pepper
  • Fresh herbs (optional, such as parsley or thyme)

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the carrots, then cut them in half lengthwise.
  3. Place the carrots on a baking sheet and toss with olive oil, melted butter, minced garlic, salt, and pepper.
  4. Roast in the oven for 25-30 minutes until tender and caramelized.
  5. Remove from the oven and gently smash each carrot with a fork or a spatula to create a flattened shape.
  6. Return to the oven for an additional 10-15 minutes until crispy.
  7. Garnish with fresh herbs if desired and serve warm.

Notes

For extra flavor, consider adding spices like paprika or cumin. Drizzling honey or adding Parmesan cheese can create a sweeter and cheesier version.
