- 1 pound Carrots
- 2 tablespoons Olive oil
- 2 tablespoons Butter
- 3 cloves Garlic, minced
- 1 teaspoon Salt
- 1/2 teaspoon Pepper
- Fresh herbs (optional, such as parsley or thyme)
Instructions
- Preheat your oven to 425°F (220°C).
- Wash and peel the carrots, then cut them in half lengthwise.
- Place the carrots on a baking sheet and toss with olive oil, melted butter, minced garlic, salt, and pepper.
- Roast in the oven for 25-30 minutes until tender and caramelized.
- Remove from the oven and gently smash each carrot with a fork or a spatula to create a flattened shape.
- Return to the oven for an additional 10-15 minutes until crispy.
- Garnish with fresh herbs if desired and serve warm.
Notes
For extra flavor, consider adding spices like paprika or cumin. Drizzling honey or adding Parmesan cheese can create a sweeter and cheesier version.
