Description

Crispy Sweet Potato and Red Lentil Patties are a wholesome, protein-rich dish with a crispy texture and creamy avocado cilantro sauce. Great for lunch, dinner, or snacking!


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 1 cup red lentils, rinsed
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 teaspoon cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup breadcrumbs
  • Oil for frying
  • 1 avocado
  • 1/4 cup cilantro, chopped
  • 1 tablespoon lime juice

Instructions

  1. Boil sweet potatoes until tender and mash thoroughly.
  2. Cook red lentils in water until soft, then drain well.
  3. In a bowl, combine mashed sweet potatoes, lentils, onion, garlic, cumin, salt, pepper, and breadcrumbs.
  4. Mix until everything is well incorporated and smooth.
  5. Shape the mixture into equal-sized patties.
  6. Heat oil in a pan over medium heat and fry patties until golden brown and crispy on both sides.
  7. To make the sauce, blend avocado, cilantro, lime juice, and a pinch of salt until smooth and creamy.
  8. Serve the patties warm with the avocado cilantro sauce on the side or drizzled on top.

Notes

For extra crispiness, use panko breadcrumbs and let the oil heat fully before frying. These patties are also great baked if you prefer a lighter version.
