Description

A delightful holiday treat combining rich chocolate with refreshing peppermint for a festive dessert.


Ingredients

  • 3/4 cup Cocoa Powder
  • 1 tsp Baking Powder
  • 1/2 tsp Baking Soda
  • 1/2 tsp Salt
  • 1 cup Unsalted Butter
  • 3/4 cup Light Brown Sugar
  • 1/2 cup Granulated Sugar
  • 2 large Egg Yolks
  • 1 tsp Peppermint Extract
  • 1 tsp Vanilla Bean Paste/Extract
  • 1 cup Peppermint Chips
  • 1 cup Semi-Sweet Chocolate Chips
  • 1/2 cup Crushed Candy Canes (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, cocoa powder, baking powder, baking soda, and salt. Set aside.
  3. In another bowl, beat the softened butter, light brown sugar, and granulated sugar until fluffy.
  4. Mix in the egg yolks, peppermint extract, and vanilla bean paste until well combined.
  5. Gradually add the dry ingredients to the wet mixture, stirring until integrated.
  6. Gently fold in the peppermint chips, semi-sweet chocolate chips, and crushed candy canes if using.
  7. Use a cookie scoop or spoon to place dollops of dough on a baking sheet lined with parchment paper.
  8. Bake for 10-12 minutes. The edges should be set while the centers remain soft.
  9. Let cookies cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.

Notes

For a stronger peppermint flavor, consider adding more peppermint extract. Measure ingredients properly for best results.
