Ingredients
6 large eggs
½ cup cottage cheese (or substitute with Greek yogurt)
¼ cup milk or heavy cream (for keto)
½ cup shredded cheddar or Monterey Jack cheese
¼ tsp salt
⅛ tsp ground black pepper
¼ cup chopped spinach (pre-cooked)
¼ cup diced red bell pepper (pre-cooked)
¼ cup cooked turkey sausage (crumbled)
Cooking spray or oil (for greasing molds)
Instructions
Preheat your oven to 325°F (165°C). Lightly grease a muffin tin or silicone mold with cooking spray.
In a blender, combine eggs, cottage cheese, milk or cream, salt, and pepper. Blend until smooth and frothy.
Pour the egg mixture evenly into the prepared muffin cups or molds, filling each about ¾ full.
Add chopped vegetables, cheese, and cooked meats evenly into each cup. Lightly stir with a spoon to combine.
Cover the muffin tin loosely with foil to trap steam and bake for 25–30 minutes, or until the centers are just set.
Let the egg bites cool for 5–10 minutes before removing from the mold. Serve warm or store for later use.
Notes
Use heavy cream and extra cheese for a keto-friendly version.
Substitute almond milk and vegan cheese for a dairy-free alternative.
These egg bites can be refrigerated for up to 5 days or frozen for up to 2 months.
Reheat in the microwave wrapped in a damp paper towel, or warm in a low oven for best results.
For ultra-fluffy texture, blend eggs and dairy, and cover during baking to trap steam.
