- 2 large eggs
- ¼ cup (50 g) granulated sugar
- 2 tbsp brown sugar
- ½ cup (60 g) all-purpose flour
- ½ tsp baking powder
- ½ cup (120 ml) whole milk
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
- Pinch of salt
- 2 tbsp sliced almonds (for topping)
- Powdered sugar (for dusting)
Instructions
- Peel, core, and slice the apples very thinly. Using a mandoline slicer works best. Set the slices aside in a large bowl.
- In another bowl, whisk the eggs with both sugars until the mixture becomes light and fluffy.
- Add the melted butter, milk, and vanilla to the egg mixture. Mix well.
- Sift in the flour, baking powder, and salt. Whisk until the batter is smooth.
- Gently fold the apple slices into the batter until all slices are coated.
- Preheat your oven to 350°F (175°C). Grease and line a loaf pan or square pan with parchment paper.
- Pour the apple mixture into the prepared pan, pressing lightly to arrange the apples in neat layers.
- Sprinkle the sliced almonds on top of the cake.
- Bake for 45–50 minutes or until the cake is golden brown and set.
- Let the cake cool completely before slicing. Dust with powdered sugar before serving.
