Ingredients
1 lb sirloin or ribeye steak, cut into 1-inch cubes
3 tbsp unsalted butter
1 tbsp olive oil
4 cloves garlic, minced
1 tsp fresh rosemary, chopped
1 tsp fresh thyme, chopped
Salt, to taste
Black pepper, to taste
Instructions
Prep the steak: Cut the steak into uniform 1-inch cubes. Pat dry with paper towels. Season generously with salt and black pepper.
Heat the skillet: Place a heavy-bottomed skillet (like cast iron) over medium-high heat. Add olive oil and heat until shimmering.
Sear the steak: Add steak cubes in a single layer without overcrowding. Sear for 2–3 minutes per side until nicely browned. Work in batches if necessary.

Notes
Let steak come to room temperature before cooking for the best sear.
Fresh herbs are best, but you can use ½ tsp dried rosemary and thyme if needed.
Add red chili flakes for a bit of heat or swap in parsley for a milder herb finish.
