Description

A delightful twist on the classic gingerbread cookies, these soft and chewy bars are filled with warm spices and topped with creamy frosting.


Ingredients

  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 tablespoon ground ginger
  • 1 tablespoon ground cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon salt
  • 3/4 cup unsalted butter, softened
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1/4 cup molasses
  • 1 teaspoon vanilla extract
  • 1 cup cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract (for frosting)
  • 1 teaspoon ground cinnamon (for frosting)

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. In a bowl, combine the flour, baking powder, baking soda, ginger, cinnamon, cloves, and salt.
  3. In a separate large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
  4. Beat in the eggs, molasses, and vanilla extract until well combined.
  5. Gradually mix in the dry ingredients until just combined.
  6. Spread the batter evenly in the prepared baking dish.
  7. Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean. Let cool before frosting.
  8. For the frosting, beat together the cream cheese, powdered sugar, vanilla extract, and cinnamon until smooth and creamy.
  9. Spread the frosting on cooled gingerbread bars.
  10. Cut into squares and serve.

Notes

Store bars in an airtight container for up to three days at room temperature or up to a week in the refrigerator. They can also be frozen for up to three months.
