- 1 lb baby carrots
- 2 tablespoons butter
- 1/4 cup brown sugar
- 1/4 cup honey
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine the baby carrots, melted butter, brown sugar, honey, salt, and pepper.
- Toss until carrots are well coated.
- Spread the carrots out in a single layer on a baking sheet.
- Roast in the preheated oven for about 25-30 minutes, or until tender and caramelized, stirring halfway through.
- Remove from the oven and garnish with fresh parsley if desired. Serve warm.
Notes
For an extra touch of flavor, you can add a pinch of cinnamon or nutmeg. If you like a bit of crunch, roast the carrots for a shorter time until they are tender but still crisp.
