Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup brown sugar, packed
  • 1/2 cup granulated sugar
  • 1 cup unsalted butter, softened
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup pecans, chopped
  • 1/2 cup maple syrup
  • 1/2 cup heavy cream
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the flour, baking soda, and salt.
  3. In another bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
  4. Beat in the egg and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients and mix until combined.
  6. In a saucepan, combine chopped pecans, maple syrup, heavy cream, and cornstarch over medium heat to make the pie filling. Stir until thickened.
  7. Allow the filling to cool slightly.
  8. Scoop out cookie dough and flatten it in your hand. Place a small spoonful of the maple pecan pie filling in the center and fold the dough over to seal.
  9. Place stuffed cookie balls on a baking sheet and bake for 12-15 minutes until lightly golden.
  10. Cool on a wire rack before serving.

Notes

Best enjoyed warm, either alone or with vanilla ice cream. Store in an airtight container for up to three days.
