- 2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup brown sugar, packed
- 1/2 cup granulated sugar
- 1 cup unsalted butter, softened
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup pecans, chopped
- 1/2 cup maple syrup
- 1/2 cup heavy cream
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the flour, baking soda, and salt.
- In another bowl, cream together the butter, brown sugar, and granulated sugar until smooth.
- Beat in the egg and vanilla extract.
- Gradually add the dry ingredients to the wet ingredients and mix until combined.
- In a saucepan, combine chopped pecans, maple syrup, heavy cream, and cornstarch over medium heat to make the pie filling. Stir until thickened.
- Allow the filling to cool slightly.
- Scoop out cookie dough and flatten it in your hand. Place a small spoonful of the maple pecan pie filling in the center and fold the dough over to seal.
- Place stuffed cookie balls on a baking sheet and bake for 12-15 minutes until lightly golden.
- Cool on a wire rack before serving.
Notes
Best enjoyed warm, either alone or with vanilla ice cream. Store in an airtight container for up to three days.
