Ingredients

- 1 lb Italian sausage
- 1 onion, chopped
- 2 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 2 cups pasta (fusilli or your choice)
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- In a large pot, cook the Italian sausage over medium heat until browned.
- Add onions and garlic, and sauté until onions are translucent.
- Pour in chicken broth and diced tomatoes, and bring to a boil.
- Stir in pasta and cook according to package instructions.
- Reduce heat, and add heavy cream and Parmesan cheese.
- Season with salt and pepper to taste.
- Serve hot, garnished with fresh parsley.
Notes
To store leftovers, cool completely and transfer to an airtight container. Keeps in the fridge for 3-4 days or freeze for up to 3 months.
