Description

A comforting and hearty Italian Sausage Pasta Soup filled with savory sausage, fresh vegetables, and creamy pasta in a flavorful broth.


Ingredients

Scale
  • 1 lb Italian sausage
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 can (14 oz) diced tomatoes
  • 2 cups pasta (fusilli or your choice)
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. In a large pot, cook the Italian sausage over medium heat until browned.
  2. Add onions and garlic, and sauté until onions are translucent.
  3. Pour in chicken broth and diced tomatoes, and bring to a boil.
  4. Stir in pasta and cook according to package instructions.
  5. Reduce heat, and add heavy cream and Parmesan cheese.
  6. Season with salt and pepper to taste.
  7. Serve hot, garnished with fresh parsley.

Notes

To store leftovers, cool completely and transfer to an airtight container. Keeps in the fridge for 3-4 days or freeze for up to 3 months.
