A low-carb, high-flavor twist on the classic Philly cheesesteak—ground beef, sautéed peppers, onions, and melty cheese all baked into a satisfying casserole under 5g net carbs per serving.

- 1 lb ground beef (80/20)
- 1 green bell pepper, thinly sliced
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 1 small onion, sliced
- 1 cup mushrooms, sliced (optional)
- Salt and black pepper, to taste
- 1½ cups shredded provolone (or mozzarella)
- Pinch red pepper flakes (optional)
Instructions
- Preheat oven to 375°F (190°C).
- In a large skillet over medium-high, cook ground beef until browned, about 6–8 minutes; drain excess fat if desired.
- Add bell peppers, onion, and mushrooms; sauté 5–7 minutes until tender and slightly charred. Season with salt, pepper, and red pepper flakes.
- Transfer mixture to an 8×8 (or 9×9) baking dish and spread evenly.
- Sprinkle shredded provolone over top.
- Bake 15–20 minutes until cheese is melted and golden.
- Let rest 5 minutes before serving.
Notes
For meal prep, double the recipe and store in individual containers. Reheat covered at 350°F. Swap cheeses or proteins as desired—pepper jack for spice, chicken or steak for variation.
