Description

A delightful treat combining the classic flavors of cookies with the chewiness of marshmallows and the crunch of Rice Krispies, reminiscent of a popular Costco snack.


Ingredients

  • ½ cup salted butter
  • ¾ cup brown sugar
  • ½ cup granulated sugar
  • 1 large egg (room temperature)
  • 1 teaspoon vanilla
  • ½ tsp baking soda
  • ¾ tsp salt
  • 1 cup all-purpose flour
  • 1½ cups rice krispie cereal
  • ⅔ cup mini marshmallows
  • Flaked salt for topping

Instructions

  1. Preheat your oven to 350°F and line a baking sheet with parchment paper.
  2. Melt the ½ cup of butter in a medium saucepan, cooking it over medium heat until it turns golden brown and smells nutty. Remove from heat and let cool for about 10 minutes.
  3. In a mixing bowl, combine the brown butter with both sugars, the egg, and vanilla, mixing on low until smooth.
  4. Gradually incorporate the salt, baking soda, and flour, taking care not to over mix.
  5. Gently fold in the Rice Krispies and mini marshmallows.
  6. Scoop the dough into large balls and place 4-5 on the baking sheet to allow for spreading.
  7. Bake for 10-13 minutes until edges are lightly golden. Sprinkle with flaked salt.

Notes

Serve cookies warm for the best experience. These cookies can be stored in an airtight container for 3-5 days at room temperature or kept in the fridge for up to a week. They can also be frozen for later.
