Ingredients

- ½ cup salted butter
- ¾ cup brown sugar
- ½ cup granulated sugar
- 1 large egg (room temperature)
- 1 teaspoon vanilla
- ½ tsp baking soda
- ¾ tsp salt
- 1 cup all-purpose flour
- 1½ cups rice krispie cereal
- ⅔ cup mini marshmallows
- Flaked salt for topping
Instructions
- Preheat your oven to 350°F and line a baking sheet with parchment paper.
- Melt the ½ cup of butter in a medium saucepan, cooking it over medium heat until it turns golden brown and smells nutty. Remove from heat and let cool for about 10 minutes.
- In a mixing bowl, combine the brown butter with both sugars, the egg, and vanilla, mixing on low until smooth.
- Gradually incorporate the salt, baking soda, and flour, taking care not to over mix.
- Gently fold in the Rice Krispies and mini marshmallows.
- Scoop the dough into large balls and place 4-5 on the baking sheet to allow for spreading.
- Bake for 10-13 minutes until edges are lightly golden. Sprinkle with flaked salt.
Notes
Serve cookies warm for the best experience. These cookies can be stored in an airtight container for 3-5 days at room temperature or kept in the fridge for up to a week. They can also be frozen for later.
