Ingredients

- 1 lb steak (sirloin or ribeye)
- 1 cup quinoa
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, diced
- 1 bell pepper, diced
- 1/2 cup feta cheese, crumbled
- 1/4 cup olives, pitted and sliced
- 2 tbsp olive oil
- 1 tbsp red wine vinegar
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Cook quinoa according to package instructions and set aside.
- Season the steak with salt and pepper, then grill or pan-sear to your preferred doneness. Let it rest before slicing.
- In a large bowl, combine cherry tomatoes, cucumber, red onion, bell pepper, feta, and olives.
- Drizzle with olive oil and red wine vinegar, and mix well.
- To serve, layer the quinoa and top with sliced steak and the vegetable mixture. Garnish with fresh parsley.
Notes
To store leftovers, place in an airtight container in the refrigerator for 3-4 days. Steak can be frozen for up to 3 months.
