Description

A vibrant and healthy meal combining tender steak with fresh vegetables and quinoa, perfect for family dinners or meal prep.


Ingredients

  • 1 lb steak (sirloin or ribeye)
  • 1 cup quinoa
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1 red onion, diced
  • 1 bell pepper, diced
  • 1/2 cup feta cheese, crumbled
  • 1/4 cup olives, pitted and sliced
  • 2 tbsp olive oil
  • 1 tbsp red wine vinegar
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Cook quinoa according to package instructions and set aside.
  2. Season the steak with salt and pepper, then grill or pan-sear to your preferred doneness. Let it rest before slicing.
  3. In a large bowl, combine cherry tomatoes, cucumber, red onion, bell pepper, feta, and olives.
  4. Drizzle with olive oil and red wine vinegar, and mix well.
  5. To serve, layer the quinoa and top with sliced steak and the vegetable mixture. Garnish with fresh parsley.

Notes

To store leftovers, place in an airtight container in the refrigerator for 3-4 days. Steak can be frozen for up to 3 months.
