Description

Mini Christmas Cheesecakes are the perfect bite-sized dessert for holiday gatherings, easy to make and sure to impress.


Ingredients

  • 1 1/2 cups graham cracker crumbs
  • 1/3 cup sugar
  • 1/2 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup sour cream
  • Colorful sprinkles for topping

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter. Press the mixture into the bottom of a muffin tin lined with cupcake liners.
  3. In a separate bowl, beat the cream cheese, 1/2 cup sugar, and vanilla extract until smooth.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Stir in the sour cream until fully incorporated.
  6. Pour the cheesecake mixture over the crusts in the prepared muffin tin.
  7. Bake for 20-25 minutes, until set.
  8. Allow to cool, then refrigerate for at least 2 hours.
  9. Top with colorful sprinkles before serving.

Notes

Make sure the cream cheese is fully softened for a smooth filling. Serve chilled and experiment with toppings for added fun.
