- 1 1/2 cups graham cracker crumbs
- 1/3 cup sugar
- 1/2 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 large eggs
- 1 cup sour cream
- Colorful sprinkles for topping
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, combine graham cracker crumbs, 1/3 cup sugar, and melted butter. Press the mixture into the bottom of a muffin tin lined with cupcake liners.
- In a separate bowl, beat the cream cheese, 1/2 cup sugar, and vanilla extract until smooth.
- Add the eggs one at a time, mixing well after each addition.
- Stir in the sour cream until fully incorporated.
- Pour the cheesecake mixture over the crusts in the prepared muffin tin.
- Bake for 20-25 minutes, until set.
- Allow to cool, then refrigerate for at least 2 hours.
- Top with colorful sprinkles before serving.
Notes
Make sure the cream cheese is fully softened for a smooth filling. Serve chilled and experiment with toppings for added fun.
