Mushroom and Spinach Lasagna

Description

A hearty lasagna combining mushrooms, spinach, and creamy cheeses, perfect for family dinners.


Ingredients

  • 9 lasagna noodles
  • 2 tablespoons olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 pound mushrooms (cremini or button), sliced
  • ½ teaspoon dried thyme
  • Salt and pepper, to taste
  • 3 cups marinara sauce
  • 2 cups ricotta cheese
  • 1 cup shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 cups fresh spinach leaves, chopped
  • Fresh basil leaves, for garnish

Instructions

  1. Preheat your oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. Boil salted water in a large pot. Cook the lasagna noodles until al dente. Drain and set aside.
  3. In a skillet, heat olive oil over medium heat. Sauté the chopped onion for 3–4 minutes, then add the minced garlic and cook for 1 more minute.
  4. Stir in the sliced mushrooms, thyme, salt, and pepper. Sauté until the mushrooms are tender. Add the chopped spinach and cook until it wilts. Remove from heat.
  5. Spread a layer of marinara sauce at the bottom of your baking dish. Place 3 lasagna noodles over the sauce. Layer half of the ricotta, half of the mushroom mixture, and a third of the mozzarella and Parmesan cheese. Repeat these layers, finishing with a final layer of marinara sauce and the remaining cheese on top.
  6. Cover the dish with foil and bake in the oven for 25 minutes. Then, uncover and bake for an additional 10–15 minutes, or until the cheese is bubbly and golden.
  7. Let the lasagna cool slightly before serving. Garnish with fresh basil leaves for added flavor and presentation.

Notes

This lasagna is best served warm with a side salad or garlic bread. Leftovers can be stored for up to 4 days in the refrigerator.
