- 2 cups of cooked pasta
- 1 cup of cherry tomatoes, halved
- 1 cup of spinach
- ½ cup of feta cheese, crumbled
- ¼ cup of olive oil
- 2 garlic cloves, minced
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- In a large pan, heat the olive oil over medium heat.
- Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the cherry tomatoes to the pan and cook for 3-4 minutes until they start to soften.
- Stir in the cooked pasta and spinach. Cook until the spinach wilts, about 2-3 minutes.
- Remove from heat and stir in the crumbled feta cheese.
- Season with salt and pepper to taste.
- Serve warm, garnished with fresh basil.
Notes
For a healthier option, try using whole wheat pasta. You can add protein like chicken or shrimp, and experiment with different vegetables.
