- 1 bunch asparagus
- 3–4 medium carrots, peeled and sliced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon pepper
- 1 teaspoon garlic powder
- 2 tablespoons lemon juice
Instructions
- Preheat the oven to 425°F (220°C).
- Wash and trim the asparagus and peel and slice the carrots.
- In a mixing bowl, toss the asparagus and carrots with olive oil, salt, pepper, garlic powder, and lemon juice until evenly coated.
- Spread the vegetables in a single layer on a baking sheet.
- Roast in the oven for 15-20 minutes, or until tender and lightly browned.
- Serve warm as a side dish.
Notes
Cut the carrots into similar sizes as the asparagus for even cooking. Don’t overcrowd the baking sheet to ensure proper roasting.
