Description

A delicious and healthy side dish that enhances the natural sweetness of asparagus and carrots through roasting.


Ingredients

  • 1 bunch asparagus
  • 34 medium carrots, peeled and sliced
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon garlic powder
  • 2 tablespoons lemon juice

Instructions

  1. Preheat the oven to 425°F (220°C).
  2. Wash and trim the asparagus and peel and slice the carrots.
  3. In a mixing bowl, toss the asparagus and carrots with olive oil, salt, pepper, garlic powder, and lemon juice until evenly coated.
  4. Spread the vegetables in a single layer on a baking sheet.
  5. Roast in the oven for 15-20 minutes, or until tender and lightly browned.
  6. Serve warm as a side dish.

Notes

Cut the carrots into similar sizes as the asparagus for even cooking. Don’t overcrowd the baking sheet to ensure proper roasting.
