Instructions

  • In a medium bowl, whisk together the olive oil, lemon juice, minced garlic, sea salt, black pepper, and fresh herbs.

  • Place the halibut fillets in a shallow dish or zip-top bag and pour the marinade over them. Let marinate for 30 minutes in the refrigerator.

  • Preheat your grill to medium-high heat (around 400°F). Clean the grill grates thoroughly and oil them using a paper towel dipped in high-smoke-point oil.

  • Remove the halibut from the marinade and gently pat dry with paper towels to promote even searing.

  • Place the fillets directly on the grill. Grill for 4–5 minutes on the first side without moving the fish. Flip once, only when it naturally releases, and grill for another 4–5 minutes or until the internal temperature reaches 130°F to 135°F.

  • Remove the halibut from the grill and let it rest for 3–5 minutes before serving.
