Instructions

  1. Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cream together the softened butter and powdered sugar until light and fluffy.

  4. Gradually add the flour and salt, mixing until just combined.
  5. Fold in the chopped pistachios.
  6. Roll the dough into balls and place them on the prepared baking sheet, flattening slightly.

  8. Allow the cookies to cool completely.
  9. Melt the dark chocolate in a microwave-safe bowl.
  10. Dip the cooled cookies halfway into the chocolate and place them back on the parchment paper to set.
