Crispy, cheesy potato stacks flavored with roasted garlic and Parmesan, perfect as a side dish or appetizer.

- 4 large russet potatoes
- 4 cloves of garlic, roasted
- 1 cup grated Parmesan cheese
- 4 tablespoons olive oil
- Salt to taste
- Pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Preheat the oven to 375°F (190°C).
- Slice the potatoes very thinly using a mandoline or sharp knife.
- In a bowl, mix the roasted garlic, olive oil, salt, and pepper.
- Coat each potato slice in the garlic oil mixture and stack them in a muffin tin or a baking dish.
- Sprinkle Parmesan cheese between the layers of potato slices.
- Bake for 45-50 minutes or until the edges are crispy and the potatoes are tender.
- Remove from the oven, let them cool slightly, then garnish with fresh parsley before serving.
Notes
For extra flavor, add different herbs or spices to the garlic oil mixture. Store leftovers in an airtight container for up to 3 days.
