Description

These easy Garlic Rosemary Focaccia Muffins are soft, fluffy, and infused with aromatic garlic and rosemary. Perfect as a snack, side dish, or dipped in olive oil and balsamic vinegar.


Ingredients

  • 2 cups all-purpose flour
  • 1 packet (7 g) instant yeast
  • 1 teaspoon sugar
  • 1 teaspoon salt
  • ¾ cup warm water
  • 2 tablespoons olive oil (plus extra for topping)
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped (or 1 teaspoon dried)
  • Flaky sea salt, for sprinkling

Instructions

  1. In a bowl, mix the warm water with sugar and yeast. Let it rest for 5–10 minutes until it becomes foamy.
  2. Add flour, salt, olive oil, minced garlic, and chopped rosemary. Mix until a dough forms. Knead for 5–7 minutes until smooth and elastic.
  3. Place the dough in an oiled bowl, cover it, and let it rise for about 1 hour, or until it doubles in size.
  4. Grease a muffin tin with olive oil. Punch down the dough and divide it into 8–10 pieces. Place each piece into a muffin cup.
  5. Cover the tin loosely and let the dough rise again for about 20 minutes.
  6. Preheat your oven to 400°F (200°C). Drizzle the muffin tops with olive oil, sprinkle with flaky sea salt and a bit more rosemary. Bake for 15–18 minutes, or until golden brown.
  7. Enjoy them warm, either plain or dipped in olive oil and balsamic vinegar.
