- 1 teaspoon baking powder
- ½ teaspoon salt
- ¾ cup salted butter, softened at room temperature
- 1 cup granulated sugar
- 2 large eggs, at room temperature
- 1 teaspoon vanilla extract
- ½ teaspoon almond extract (or reduce to ¼ teaspoon for a more subtle flavor)
- 3 cups powdered sugar, sifted
- 3–4 tablespoons milk
- 2 tablespoons light corn syrup
- ½ teaspoon vanilla extract
- Gel food coloring (optional)
Instructions
- In a large bowl, whisk together the flour, baking powder, and salt. Set aside.
- In another bowl, cream together the softened butter and granulated sugar until light and fluffy.
- Add the eggs one at a time, mixing well after each addition; then add vanilla and almond extracts.
- Gradually add the flour mixture to the wet ingredients, mixing on low speed until a soft dough forms.
- Divide the dough into two portions, dust with flour, and roll out to ¼-inch thickness on parchment paper.
- Cover and refrigerate for 1-2 hours, or overnight.
- Preheat oven to 375°F and line baking sheets with parchment paper.
- Cut out shapes from the chilled dough and place them on the baking sheets, chilling again if needed.
- Bake for 8-10 minutes until lightly browned. Cool on racks.
- For optional icing, mix powdered sugar, milk, corn syrup, and vanilla until smooth, adding food coloring if desired.
Notes
Chilling the dough is essential to prevent spreading during baking. Use parchment paper for easy cleanup.
