- 4 cups roasted sweet potatoes
- 1/2 cup maple syrup
- 1/4 cup brown sugar
- 1/2 cup raisins
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 1/4 teaspoon salt
- 2 cups mini marshmallows
- 1 cup chopped pecans
- 2 tablespoons maple syrup (for topping)
Instructions
- Preheat your oven to 350°F (175°C).
- Mash the roasted sweet potatoes in a large bowl.
- Stir in maple syrup, brown sugar, raisins, cinnamon, nutmeg, and salt until well combined.
- Fold in mini marshmallows and transfer the mixture to a greased baking dish.
- In another bowl, mix chopped pecans with 2 tablespoons of maple syrup.
- Sprinkle the pecan mixture evenly over the sweet potatoes.
- Bake for 25–30 minutes, until golden brown and heated through.
- Serve warm and enjoy!
Notes
You can make this casserole ahead of time and bake it just before serving. Try adjusting the sweetness to taste or swap pecans with walnuts.
