Ingredients

  • 4 cups roasted sweet potatoes
  • 1/2 cup maple syrup
  • 1/4 cup brown sugar
  • 1/2 cup raisins
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 cups mini marshmallows
  • 1 cup chopped pecans
  • 2 tablespoons maple syrup (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Mash the roasted sweet potatoes in a large bowl.
  3. Stir in maple syrup, brown sugar, raisins, cinnamon, nutmeg, and salt until well combined.
  4. Fold in mini marshmallows and transfer the mixture to a greased baking dish.
  5. In another bowl, mix chopped pecans with 2 tablespoons of maple syrup.
  6. Sprinkle the pecan mixture evenly over the sweet potatoes.
  7. Bake for 25–30 minutes, until golden brown and heated through.
  8. Serve warm and enjoy!

Notes

You can make this casserole ahead of time and bake it just before serving. Try adjusting the sweetness to taste or swap pecans with walnuts.
