Delicious stuffed sweet potatoes filled with warm spiced apples, perfect for a cozy meal.


Ingredients

  • 4 medium sweet potatoes
  • 2 cups diced apples
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1 tablespoon sugar (optional)
  • 1/4 cup maple syrup
  • 2 tablespoons butter
  • Salt to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Pierce the sweet potatoes with a fork and bake for 45-60 minutes, or until tender.
  3. In a skillet, melt the butter over medium heat.
  4. Add the diced apples and sprinkle with cinnamon, nutmeg, sugar, and salt.
  5. Cook until the apples are soft, about 5-7 minutes.
  6. Once the sweet potatoes are baked, cut them open and fluff the insides with a fork.
  7. Spoon the spiced apples into the sweet potatoes.
  8. Drizzle with maple syrup before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the microwave or oven.
