- 1/2 cup butter, softened
- 1 cup sugar
- 1 egg
- 1 teaspoon vanilla extract
- 1/4 cup rainbow sprinkles
- 16 oz cream cheese, softened
- 1/2 cup sugar
- 1 teaspoon vanilla extract
- 2 eggs
- 1/2 cup heavy cream
- 1/2 cup powdered sugar
Instructions
- Preheat your oven to 325°F (165°C) and prepare a springform pan by greasing it lightly.
- In a mixing bowl, combine butter, sugar, egg, vanilla, and rainbow sprinkles. Mix until well blended to form the sugar cookie crust.
- Press the cookie dough evenly into the bottom of the springform pan.
- In another bowl, whip together cream cheese, sugar, vanilla, and eggs until the mixture is smooth and creamy.
- Pour the cheesecake filling over the crust in the springform pan.
- Bake in the preheated oven until the cheesecake is just set, about 50 minutes. Let it cool completely.
- For the topping, whip heavy cream with powdered sugar and add extra sprinkles for fun.
- Chill the cheesecake in the refrigerator before decorating with the sprinkle whipped cream.
Notes
Make sure the cream cheese is at room temperature for the best texture. Don’t overmix the cheesecake filling; mix until just combined for a fluffy result.
