Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cream the softened butter and granulated sugar until light and fluffy.
  3. Gradually add the flour, cornstarch, and salt, mixing until just combined.
  4. Stir in the vanilla extract.
  5. In a separate bowl, mix together the pumpkin puree with the cinnamon, nutmeg, and ginger.
  6. Roll the dough into small balls and flatten them slightly, placing a spoonful of the pumpkin mixture in the center of each and folding the edges over.
  7. Place the cookies on a parchment-lined baking sheet and bake for 12-15 minutes until edges are golden.
  8. Cool slightly and dust with powdered sugar before serving.
