Description

Deliciously rich and soft cookies that bring the classic flavors of tiramisu to your cookie jar, featuring coffee and chocolate.


Ingredients

  • 2 cups all-purpose flour
  • 1 cup unsweetened cocoa powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/2 cup unsalted butter, softened
  • 2 large eggs
  • 1 tablespoon instant coffee granules
  • 1 teaspoon baking powder
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt
  • Chocolate chips (optional)
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix the flour, cocoa powder, baking powder, and salt.
  3. In a separate bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the eggs one at a time, then stir in the instant coffee and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until combined. If desired, fold in chocolate chips.
  6. Drop spoonfuls of dough onto a baking sheet lined with parchment paper.
  7. Bake for 10-12 minutes or until the edges are set.
  8. Let cool, then dust with powdered sugar before serving.

Notes

For an extra treat, serve with whipped cream or vanilla ice cream. Store in an airtight container for up to a week, or freeze for up to three months.
