- 1/4 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 8 ounces cream cheese, softened
- 1/4 cup powdered sugar
Instructions
- Preheat the oven to 350°F (175°C).
- In a bowl, whisk together flour, ginger, cinnamon, nutmeg, baking soda, and salt.
- In another bowl, beat together butter, brown sugar, and granulated sugar until creamy.
- Add egg and vanilla, mixing well.
- Gradually add the dry ingredients to the wet mixture until combined.
- In a separate bowl, beat the cream cheese and powdered sugar until smooth.
- Scoop a tablespoon of cookie dough, flatten it, add a bit of the cheesecake mixture in the center, and seal the dough around it.
- Place on baking sheets and bake for about 10-12 minutes.
- Allow to cool before serving.
Notes
Store in an airtight container for up to five days or freeze for longer storage. Make sure butter and cream cheese are softened for easy mixing.
