- 1 cup pumpkin puree
- 2 cups rolled oats
- 1/2 cup honey or maple syrup
- 1/2 cup almond milk
- 1 teaspoon vanilla extract
- 1 teaspoon baking powder
- 1 teaspoon pumpkin pie spice
- 1/2 teaspoon salt
- 1/2 cup chopped nuts (optional)
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking dish.
- In a large mixing bowl, combine pumpkin puree, honey (or maple syrup), almond milk, and vanilla extract.
- In another bowl, mix together rolled oats, baking powder, pumpkin pie spice, and salt.
- Gradually add the dry ingredients to the wet ingredients, stirring until just combined. If using, fold in chopped nuts.
- Pour the mixture into the greased baking dish and spread it evenly.
- Bake for 25-30 minutes or until the edges are golden and a toothpick inserted in the center comes out clean.
- Let it cool before cutting into bars.
